In SFV Bison's Character Guide it's said SFV Bison is "Bison in his absolute prime", and that's before the Operation CHAINS started, meaning SFV Base Bison is more powerful than even Alpha Bison. By the end of the 'A Shadow Falls' Story Mode, Bison's Psycho Power has increased greatly thanks to the Black Moons, and Undead Nash after having mastered his new power was able to fight Bison and even overpower him, you can see Bison is on his knees after the fight. Then Bison said "Pathetic attempt", but that's not because he was holding back, he just got another amp by the Black Moons at the end of the fight, and this amp made him powerful enough to one punch Nash. If Rashid had shut down the Black Moons a few seconds earlier, Bison would've got destroyed by Nash, hence why Nash said "A bit late" after the Black Moons got shut down (Rashid couldn't shut them down on time).
So what they tried to show is SFV Bison is superior to Undead Nash Only thanks to the Black Moons. SFV Nash is definitely up there.
