Question is how long will Alucard be able to recover? Since their fight can literally take eons and they will never get tired, i believe Doom Slayer will eventually win, at the expense of experience, knowledge and skill. My vote for Hellwalker - Rip and tear, until it is done.

Pretty sure alucard can regenerate in a permanent fascion, as shiwn when he lacked his souls and still did it.
He can also reabsorb dead pieces of himself, so there is that
