Okay, so Don Quixote. He has a durability of 1.93 Megajoules and is generally delusional. As for the Impostor... 1.04 megajoules (though I have recently made a calc nerfing the feat he scales from based on a real-life visibility experiment; still have yet to find a guy to look it over) for the basic punch that crewmates barely survive and 1.76 megajoules for killing blows with the gun. So basically the Impostor's normal AP is 1.04 Megajoules and his killing AP is 1.76 megajoules. Now, you may be wondering... Impostor has a gun! Well, here's the thing... Field testing from Demolition Ranch show that knight's armor can handle handgun fire (although the chainmail is more susceptible to hits):

Since the Impostor's gun is a handgun, it's possible for Don Quixote to handle it. I don't think his horse could, tho. Impostors usually play with people's minds as noted with, well... Normal Among Us gameplay. More than likely the Don would be thrown astray.

While the Impostor does have a gun, his strategy is generally to get up close to a target in order to make the kill through any means necessary, whether it's venting or just straight-up walking up to them. With his lance, Don Quixote can generally match the Impostor's preferred killing range. I should probably calculate that some time.

In any case, let's give Don Quixote some prior knowledge on the Impostor, as I don't see this match being fair otherwise. Speed isn't really an issue since Don Quixote is generally faster than the Impostor on a normal basis whereas the Impostor is faster using specific tactics. In any case... Profiles.:
