He hasn't turned human body water into corruption in-game, but that could also be the main characters Plot Armor.
Even if it doesn't count, he can still direct it into a person body just by flicking his hand at them.
Or can make hundreds of gallons of it from nowhere.

...It's pretty much is only offensive ability that isn't picking you up with corruption and either slamming you against any surfaces or dropping you off a conveniently placed cliff.
2:04 to 2:23 is good example of how he handles most fights
Also...turns out I forgot an ability on his profile. All of the four corrupted, including him can self-heal. It's slow...but they can.

So his poison apparently slowly kills you over time. What's stopping Edward from slamming entire walls onto him to either incap him or potentially oneshotting the alchemist?

2. Again, the video above shows he can make hundreds upon hundreds of gallons of the corruption in a matter of seconds, which kills much more quickly then it's gaseous form
3. Due to controlling all corruption (At least in his area) he could simply slam enough corruption onto him (Even when incapacitated, since the other corrupted have shown, they can affect the area without even being present, or "unavailable") and either kill him or turn him into a monster slave, as the force of his corruption movement breaks apart the ground, albeit slightly.
4. His body is made of corruption. Which he can manipulate to various extents.
5. Portal Creation...portal his way outta the way.
6. Survived falls of great heights. At least a few miles, without injury.
