So Mori holds a stupidly huge advantage in variety here so how will Lee hold up martially?

Honestly, Lee’s faster than most of his opponents, so a lot of his potential feats and statements are probably better attributed to that than his actual martial skill.
In terms of how he fares against a comparably fast opponent, Lee’s skill level at this point is roughly even with someone who can easily beat large rooms of ninja who’ve been training their whole lives. When he’s drunk, he’s slightly more skilled than people on that level, his attacks become extremely difficult to predict, and he has some instinctive reactions (though, since he doesn’t have alcohol as standard or optional equipment, I don’t think this matters).
So not particularly impressive. Mori should skill stomp. Lee’s also at a minor AP and major stamina and range disadvantage here, making things even worse.
 
Mori will also be growing a lot stronger as the fight goes on so he'll get to a point where one-shots pretty quickly since he's done so in an earlier key.

Yeah, Mori seems to stomp ngl.
