The move Feint bypasses defenses, kinda like Wingblade Armor, along with precog.

Anyway, I would go with inconclusive they both have versitalty and great sword skills, they can both bypass each other's defence with Erza having durabilty negation with Nakagami starlight as well while Gallade has the possibilty to go for range attacks as well which thou would include running away from Erza which would be difficulty since she can follow him on ground and even fly with black wing armor for short distances which should be for couple of hundreds of meters (low number) plus she has a much greater stamina allowing her to tank more damage and take him down with less effort than he can her and they would probably end up more in close combat anyway.
One more thing flying attacks are counted as wind attacks?
