Sun Wukong may have some really great hax but unless they one-shot Seiya those techniques and spells would become useless after Seiya saw them once.

And Seiya's own attacks would keep getting stronger, faster and more precise as the fight went on, as has been demonstrated over and over. Even if he couldn't kill Wukong he would eventually KO or incapasitate him long enough for it to count as a win.
