1) Beatrice should be 1-A because of Umineko revisions. This match would be a stomp.

2) Even if she was 1-C, Stephen is far above the baseline 1-C, being superior to this guy.

I mean, I don't really see the point, since almost anyone in the verse will become 1-A.

The Piece Characters aren't the versions being upgraded to 1-A. The versions being upgraded that high are the Meta World forms and higher.
The other key should be just fine.
