How does the Bone Absorption work?
Knochen is a giant pile of bones and can just add other bones in the surroundings to the pile. Given, I don't think it would work on bones already possessed by another soul. So Knochen would likely need to split a bone off of Brook before he can absorb it.

Doesn't work because Brook can reform him self.
 
Reform by himself or by sticking the bones back together?

Anyway, bone absorption is really not the main wincon here. The main wincon is the giant mountain of bones that is Knochen just grinding Brook to dust.
 
So, to put an argument on the table: Brook is certainly more skilled than Knochen. If Knochen creates beasts and soldiers from his bones and has those attack Brook, I have no doubt that Brook can hold himself against those. Thing is, Brook defeating those bone constructs deals pretty much no damage to Knochen, so he makes no real progress like that.
To defeat Knochen he has to defeat the giant pile of bones itself. And when he currently isn't a fortress (with boosted defense stat) then he could just move around as a flying wave of bones. And against that, sword fighting skills are just no use. You can fight a skeleton, but you won't outskill a tidal wave. Even if it's made from bones.
The sheer mass of Knochen should take this home for him. It's too much to fight with skill and can just eat too much damage in addition to that.
