I don't think it's that clear cut. Just because he has higher durability doesn't mean that the T-Rex can't hurt him. If anything it's good that the T-Rex has those teeth. That just means that he can hurt Shrek a bit more. After all, Puss in Boots' sword hurt him, so I don't see why T-Rex teeth can't. It's not really a durability stomp.
 
I read the small building level durability bit and it seems to be only to bludgeoning damage (falling in this case), but he has been stabbed by sharp objects before.
