Also because this is in the Spirit Realm, Po's resurrection won't really come into play.
So Sonic has both a speed and AP advantage, along with a reliable way to beat Po outside of something like the Mindslip.

Well, assuming Sonic can't transform at all, he can't really get out of the Spirit World.
If he can transform, he would be more powerful than Jindiaogoing by this wiki's standards, allowing him to escape the Spirit World with raw power.

The Spirit World was changed so that if you have "more power than the Spirit World itself", you can break out of it by punching a hole in its boundaries, which is how Jindiao escaped.

Alright, then if Po manages to use Wu-Xi Finger Hold Sonic can't escape.
Po also has techniques like the Thundering Wind Hammer and Mongolian Fireball for range.
Assuming this takes place in the mortal realm I vote Po via Finger Hold.

Tho, the way Wu-Xi Finger Hold was used by Po in the 1st movie seemed more like PIS.

It kinda makes sense honestly.
Po was really just the perfect combination of goofy fighting style and physiology to take Tai Lung down, circumstances that likely no other fighter at the time could replicate.
Finger Hold does kinda come out of nowhere but Po is a kung fu geek and he did go through a fair amount of training so you can probably give some leeway there.

No, I agree with everything you said about Po's ability to fight but the finger hold was PIS. I don't believe Sonic, who is a great fighter in his own right, would fall under the finger hold as easily as Tai Lung.

Tai Lung also only fell for the finger hold after being beaten the shit out of him and he could barely stand when he tried to attack Po just before he got BFRed
Po would have a very hard time catching Sonic with this specific technique (which he doesn't start with in-character. He uses it in-character but that isn't his starting move), and Sonic is also very skilled in h2h combat in his own right. He also hold both AP and speed advantage

Po does describe the Finger Hold as his best move so he's definitely willing to pull it out when things get rough.
Mastery of Chi Po is also upscaling a fair bit from Hero's Chi Po which has the feat in question.
Probably not enough to match Sonic per se but worth noting.

Po, Tigress and the pandas literally planned how to distract Kai in order to let Po get an opening to use the Wuxi finger hold on him when Po caught Kai by surprise
Here Po have no outside help, doesn't have the element of surprise, and fights against someone who is both much stronger and much faster than him

The entire movie was leading up to the moment in which Po outmatches Tai Lung with his more creative and unpredictable fighting style. It's the end of his ark in that film. It's anything but PIS

Even in KFP1 Po only used the wuxi finger hold on Tai Lung very late into the battle when Tai Lung was already got beaten to the point he could barely stand and was heavily weakened. And as I said, Po needed Kai to be distracted so he could catch him off guard and use the Wuxi finger hold on him

Should also mention how Po can blind Sonic with the Golden Lotus Clap to make it easier to get the Finger Hold off.
