Phoenix Ikki was able to defeat Virgo Shaka even after Shaka destroyed his 5 senses and his 6th Sense, i.e, his mind.

It is a natural ability of the 7th Sense to replace the functions of your first 6 Senses even after they are destroyed.

So unless Luke can affect Seiya's 7th Sense (He can't), his Mind Hax won't do much.

That just means Luke's Mind Hax is greater than their resistance. He's not bypassing the resistance of those guys, he's overpowering it. Two different things. He isn't using a Mind Hax that voids a resistance.
