Honestly I just think Jozu didn't want to try and fight Croc and Doffy at the same time, like even if he thought he could have won (he's probably not arrogant enough to believe that though) he certainly couldn't do it before Ace got killed.
It's way different than him trying to fight Kuzan since he did that so Whitebeard could progress and save Ace (and obviously Whitebeard > Jozu so Whitebeard is more reliable in that situation), but he had no reason to try and fight both Croc and Doffy, it was best to just sit there and hope they didn't try to jump him.
Throughout Marineford we've seen the Commanders consistently try to get to the platform instead of take down the Marines and Warlords. The only time they go out of their way to fight them is when they're a severe threat to an ally (Vista stopping Mihawk from murdering Luffy, Jozu stopping Kuzan from stalling Whitebeard, Marco kicking Kuzan and Kizaru away, etc.), they barely tried to fight anyone outside of that. So yeah, no reason for Jozu to just take a detour and 1v2 the Warlord duo.
