I think the best explanation is just that this Thor variant is much, much weaker than the main timeline version. We can even see how when Infinity War Thor got fried by the power stone directly in his skull he was fine a few hours later, but Marvel Zombies Thor was permanently scarred by a single blast

they originally planned for him to absorb the stones and takes hulk role becoming infinity black panther would’ve rather seen that then what we got instead we got a watered down fight with thanos because BP couldn’t speak
