Pre-Awakening Thor should have resistance to Mind Manipulation since he implied that a mind control that could affect a human would not be able to affect him because he was mighty, and took the longest to be affected by Scarlet Witch's mind control.

Stormbreaker is stated that if a being tries to wield it, and lacks the necessary strength to do so, they will have their mind collapsed into madness. Therefore, Post-Awakening Thor, and all who can wield and use Stormbreaker's power (Captain America with Mjölnir, Thanos and Gorr), should have resistance to Mind Manipulation and Madness Manipulation.

It'd just be madness manipulation for stormbreaker wielders. Madness manip is a subdivision of mind manip and that statement for stormbreaker doesn't really show anything warranting resistance for general mind manipulation.
According to the Madness Manipulation page, Mind Manipulation is one of the methods to achieve it:
Mind Manipulation: Users of this type rely upon directly interacting with the minds of their victims, utilizing various forms of mental attacks to drive them insane.

  • Limitations: Sufficient Resistance to Mind Manipulation renders this approach useless, as does anything else that would interfere with the user's ability to affect the victim's mind.
 
But this isn't really a direct attack on the mind though. The way it's being described is through strength of the user causing their mind to be unable to handle it rather than a direct application onto the mind from the weapon.
 
Could it also be that Scarlet Witch can unwittingly even enable some of them to see the future, like in Tony and Thor's case?
