Mandy, unter the effects of the chicken ball that Eris gave her, and Billy, boosted by Grim's powers, were able to blow up a coliseum as a result of fighting with all of their power.

Eris survives an explosion comparable to the mountains in the background of it.

Where was it established that Eris' apple is "capable of destroying all of existence" as Grim's profile claims?

If true then is that 3-A or Low 2-C like Grim's Reapers Scythe? And can Eris use that power?

It was established in the episode where she gives the apple to other people. It would be a Low 2-C feat.

If Grim's base stats scales to Billy and Mandy's during that collision, and then scales to Eris' for that mountain-level durability, i don't mind a upgrade at all.

She already has longevity but I didn't found nothing so far to give her immortality type 1. I didn't research much tho.
