I want to play every core canon game in every series in Super Smash Bros. I want to know if there’s a guide on what is and is not canon for each individual series.

Well, if you must know, the Earthbound games (yes, even Mother 3) and the Kid Icarus games are part of the Super Smash Bros. canon.
There's also the entire catalog of Kirby games, but that's too obvious.
