Her singing requires some time to activate, at least that's what's shown in the profile. Plus goku can still throw a ki blast/flex his muscles while she is singing, which still means she is getting one shotted.

Plus he is way faster due to him having Analytical Prediction which allows him to react and move to people faster than him, and his own After image technique that works against people as fast or even faster than him. So...uh he is blitzing and literally one shottting.

Also Uta will make them fall asleep by singing. (I don't think Goku's limited sleep manip resistance can really be applicable here)
