Dijkstra is described officially as almost 7 feet tall, so, around 210-211 cm, Geralt close to him doesn't looks more than 12 cm shorter (4.7 inches). My opinion is that, Geralt should be around 6'6 or 6'6.5, so around 198-199 cm.

secondly most of characters shown in witcher 3 are of the same height

we do not know the true height of geralt

we talk about the power of a certain character and compare them to other character to see who would win in a fight
 
In the stats, characters are often described in height and weight, so it's fine to guess how tall Geralt is.
 
No, unless the profile it's a kajiu profile then no there isn't a single profile that has height listed for a character

Unless a character is microscopic or giant there is no need to add the height

Because it will not change anything for the characters powers and abilities or the overall fight with someone
 
Put some ice on it, Gribble. Character heights, especially in relation to objects in an environment, are oftentimes pretty integral to speed and AP calcs, such as using angsizing to determine distance travelled or directly comparing character size to the size of an object they're hitting or being hit by
 
Ciri is noted to be 5'9" in the books, and Geralt is taller than her, but only by a head and a half or two.

Though it really won't affect Geralt's AP calc that much.
