Does not dying from Absolute Zero count as a minor form of resistance to it?

Do you mean that the environment is at Absolute Zero or your body temperature is lowered to that level? If the former then I don't think so but if it's the latter then probably yeah.

Not sure, it comes from a generic "They are hit by an absolute zero attacks that makes them faint but doesn't kill them. Does that mean they somewhat resist to it, given that normally it would kill an individual?"
But I guess that thing is valid either ways, maybe it could even be specified in the AZ page.

"Limited Resistance to Absolute Zero" should be fitting enough. They don't die, but they're not unaffected either, it's pretty much exactly
when we use the term "limited resistance". Though, as far as battles go it wouldn't really make a difference, since incap is a wincon.

Something at absolute zero hitting you is not absolute zero resistance whether it kills you or not, since the esortic stuff like atmos being unable to move would just not happen.

You can maybe argue limited resistance to freezing since their bodily liquids didn't freeze and rupture their bodies, but even then that would be stretching it.
