Which version of Eren? Anyway Eren has no resistance to soulhax and Menos can shoot energy beams from a distance which damages soul

Eren's regen, hardening and huge skill advantage should be enough to help him this. Hardening his body should give him the ability to kill the Menos once he gets in close. As long as he doesn't stand there and let the Menos blast him with a cero he should be fine.

I mean, if that's soul Manipulation, and Eren has no resistance to it, it should one-shot unless specified to work otherwise.

It would still probably be a one-shot. Soul Manip is only ever not a one-shot when either:

1: The character has resistance to Soul Manip, or

2: The Soul Manip is specified to work in a different way than usual.

pretty much all attacks in bleach use soul hax as it damage souls , cero isn't an exeption.

anyway , menos could just rip eren soul ,consume it and call it a day.

only souls that are really weak are intangible( normal humans soul) . strong one like shinigami/hollow are too dense to be intangible.
