People seem to forget that Big Mom has taken no damage from characters who can trade blows with her such as Kid. Bullet's main method of fighting includes raw power, something that would be ineffective against Big Mom, who we've seen take 0 damage so far from the current fight. Even Jinbe's Vagabond Drill (dura negating via internal water manipulation) didn't hurt her. It just shoved her off the Sunny.

That being said, something like Soul Pocus would be useless against Bullet, who would not fear Big Mom. Other attacks from her would be quite effective, however.

Big Mom has Haoshoku Coating and can use advanced forms of Haki similarly to Luffy and Kaido (... and WB/Roger), something we've not seen Bullet use--ever. We've already established that Goken and Haoshoku Coating strikes are significantly above any level of Buso: Koka, so Bullet's mastery of the ability would be irrelevant.

Bullet's physical abilities... are incapable of matching Big Mom's via the latter being physically superior in every way and also having superior Haki.

Bullet's only advantage here is intelligence because Big Mom is a literal mixed bag of emotions and personality, thus likely wouldn't remain wholely focused on the fight until things get deadly.

Big Mom's homies would be quite effective in dealing damage as well since lightning deals internal damage, wielding a blade would enhance Linlin's attacks (Ikoku Sovereign), and fire burns. In b4 she fires off a Maser Cannon.

Big Mom takes the W quite handily. Bullet's only win-con is outsmarting her long enough, which really depends on BM herself.
