I've been thinking about why Yhwach doesn't use Quincys powers and remembered that as long as he has Yama's Bankai he can't, as the other Quincys couldn't use his form while holding the locket. It's just a maybe, it probably doesn't apply to Yhwach.
Considering that Quincys who have a scrhift can use their final form, then it's likely that Yhwach also has and couldn't use it due to the medallion. I wonder if the final form of the almighty is the joining of all scrhift

Ukitake's Shikai is absorb an enemies attack and reflect it back "once" per attack. His beyond bankai looks like he absorbed a specific attack from Shunsui's shikai abilities (the shadow one) and he (Slaveri-style) absorbed it and melt it with his body and bankai making it his main power for the whole fight or until he absorbed another person's ability but that would be too OP.
TLDR Ukitake's bankai allows him to use the absorbed attack permanently for the remain of the fight unlike his shikai been a one and done deal.
