Idk if it’s me, but considering how famous is bleach with Shonen, this seems straight up inspired, even the wording is very similar.

It's just heavily implied that Shunsui didn't get a lot stronger. Kubo heavily implies that the super old captains (Yama, Unohana, Jushiro, and Shunsui) don't vary much in strength over the arcs.

But I don’t think the Vizarrs should scale fully at that point in the 2vs1, idk I always find weird so many people were against starkk when he was actually depressed (although starrk claimed he could kill both of them before shunsui stabbed him)

The power to see all possible future and rewrite reality is not a new thing to Fiction. Prescience is the ability to see all possible future. Omnipotence is the ability to rewrite reality. Two different abilities.

Combine together they make the Almighty. Both abilities are Shibai’s abilities. Did you know Eida’s ability who is also Shibai’s ability, allows to see the present and past of everything? Not just those in front of him? I would say Shibai is truly Omniscient unlike Yhwach or the Soul King who can only see the future of who they are looking at.

Let's say aizen, urahara, yoruichi, gin, tosen etc.. never left gotei since SS arc and are all in good terms with Yamamoto and the others, and they actively train to be at their best, on top of that Unohana also fight actively.

How would perform this gotei VS the sternitters? Considering genius combo of aizen urahara and mayuri too.

I think it would depend on how they die. If they were killed by a zanpakuto, they would be killed, but if they die of natural causes, they probably just pop out of the gigai. This is ignoring special gigai like the one Rukia was in in arc 1 and Isshin's gigai. Who knows what the hell Urahara did to those things.
