Most likely their bodies were destroyed and their SOUL persisted which allowed the Monsters to capture them (this was pointed as a weakness for a Human SOUL in the story the walls in Waterfall told). How Frisk wasn't captured when their SOUL was released could be that they didn't want to come back at that point, as they just want to help the Monsters and likely want to fix any mistake they made, which lead to their SOUL being destroyed. Remember, Determination can only work if the user wants to come back. Frisk can choose whether or not to come back from death.
Pretty sure there were only Six, otherwise the Monsters would have been freed long ago and destroyed humanity because they only need Seven Human SOULs to destroy the barrier. Frisk coming along to the Underground was a pretty big deal after all.
If Napstablook and Mad Dummy had a "physically resistant form" you would still need to find a way to harm them, and Mad Dummy explicitly said and shown that Magic can harm them. They also said they needed Frisk's SOUL to cross the barrier. And according to Alphys, you need at least a Human and Monster SOUL to cross the barrier. Their also both considered Monsters meaning they have a SOUL, the only ones who don't are Flowey and Chara during the Genocide Route.

Again, nope. The entire time you fight Asriel it's crystal clear he wants to erase your existence.
Flowey was the one who wanted to take Frisk's SOUL cause he only had Six. Asriel had Seven, so he didn't need Frisk. Not to mention, with their Determination at their highest even the slightest chance of leaving them alive would be problematic for Asriel. He mentioned in the second half how:
"Every time you die, your grip on this world slips away. Every time you die, your friends forget you a little more. Your life will end here, in a world where no one remembers you...".
Why would someone who wants to absorb someone want to let the person they want to absorb die, wouldn't that mean they can't be absorbed anymore?

"I want to destroy you"
"I want to absorb you"
Have two COMPLETELY different meanings, and that would mean Toby Fox and the UT crew couldn't tell the difference between the two phrases, which is silly considering Flowey already said he wanted to absorb or take Frisk's SOUL. Asriel wanted to reset anything so they can start all over again and keep playing with Frisk, thinking they were Chara. And they can't do that if Frisk was absorbed by Asriel, now can they?
