Change in Art styles with canons

Say there is a 20 year gap between a prequel and a sequel

the sequel gets introduced but it changes some details on a character

their eye color, their hair color, their height.

Are these really grounds to separate their canons or make a whole new profile for that character when everything else is consistent other than just a change in art?

Probably not. As long as everything else is the same it should be fine.

Also, I think you mean remake since if it's a sequel it would be different because it would be a continuation of the story.
 
JoJo exists.
Where the character's colors change literally every chapter (Fugo has like a dozen color schemes for example) and there's like two dozen art style shifts, all of which are explicitly canon.

A shift in the author's style of how something is animated doesn't mean something is or isn't canon, use other information to figure that out, even outside of JoJo, something like Zelda pulls that all the time, all of which are indeed canon.

And if there's a 20 year irl gap at that, you should assume by default it'll look different because >20 ******* years.
