He is the literal manifestation of death I'm pretty sure he would be undead in some shape or form
 
Because he isn't undead. Just because you are the concept of Death doesn't mean you have died. Such as Hades or "death gods". They are the concept of death and don't fit that reasoning of being "undead". To be honest that should be removed from other "Death" profiles as it is technically inaccurate.
