What actually is the Amaranth? Is it God? Or all gods? Or is it like Anu? I'm confused here.

As far as I understand, it is the future replacement for Anu.

Pretty much, yes. It is the replacement God of the Elder Scrolls verse.

To make it simple, Anu is the dreamer of The Elder Scrolls verse, a dream conceived in mourning and pain.

The Amaranth, also known as the "Baby made of Flowers" or "The Nu-Man" or New Man is the son of Jubal Lun-Sul and Vivec, a new dreamer who will create a new universe conceived by love

I don't think it cease to exist, I think it's more like an Inception thing, a dream inside another dream inside another dream.
