While Sub has better martial art skills and experience I think they're comparable in overall combat skill.

Okay then, Think I will give It for scorpion, yes undyne has hax advantage with her soul hax, hability to make sub imobile and Spear Danmaku but sub should have much more experience in combat sinse Undyne really only fought children that fell in the underground and maybe some monsters during traning while sub was actually in wars, Not to mention sub has some good mobility options with his ice tricks like teleportation, not to mention he actually has some resistence on his soul :V

meh, I was told a bunch of times that undyne don't really scale to asgore

and this make undyne a bit harder but Subzero should still be able to overmanuvere undyne, keeping my vote

Not much but she is the leader of the guard of the underground so asgore probable choosed her for beingh the most skilled(she also fought a bunch of kids)

Ah okay so Undyne just scales to that, meaning her skills got the attention of someone good. But Sub has a similar but better feat than Asgore's where he rebuilt his Lin Kuei warrior clan (which includes training and organizing them) from the ground up to be Earthrealm's finest defenders with a formidable set of kombat talents, including routing Kotal Kahn's invading armies (which had a number of playable fighters, the army isn't just fodder) from Earthrealm back to Outworld among other stuff.
