Part of her body vapourised. I understand that Ryuko cannot regen from being completely vapourised, but I believe that excaliblast's AP and Ryuko's dura are close enough that Ryuko would be able to surive without being completely vapourised, and would be able to regenerate from that.

I remain unchanged as well. Ryüko won't regen from parts of her body being vaporized as not only she does not have that level of regen but also there's no showing of her actually regen on a molecular level.

Depends on how much of her body gets vaporized. Her regen in True Life Fiber Synchronize is far below Kisaragi. It's been some time since I saw KLK, but I can't remember a regen feat that would qualify as high-mid before she gets Kisaragi.

I also stay with my vote for Saber.

Ryuko also doesn't have that "cut from both sides" weakness anymore in Kisaragi. But this form should still be High-Mid.

Ragyo stabs and impales her hundreds of times from both sides and Ryuko casually regenerates like it's nothing. She doesn't have that weakness in Kisaragi.

I vote Saber due to her skill and experience along with her sword Excalibur which can easily get through Ryuko's regen as well as other reasoning given above.
