To facilitate some future revisions I preferred to create a simple thread here about Jujutsu's anime. To be specific, about the canonicity of the anime

In the official fanbook it is said:

In the anime, I check the storyboard with the parapalmist and the person in charge and leave the rest to them. I'm not sure if it's a good idea, but I think it's a good idea.

Basically, Gage Akutami checks the anime timeframe. So anime can be used for calculations and to get a better context of a scene (except if the scene in anime is completely different. Currently the only completely different scene is the one with Ultimate Cannon)

This is fine and used for every verse, timeframes and context from the anime can be used for a feat, however the pixel scaling of the manga should preferably be used over anime pixel scaling when possible

Manga timeframes takes priority as the primary canon as mentioned in the wiki's canon page, though the anime helps with context if it is compatible with the manga's scene, but if a calculation based on the manga gets different results it takes priority.
You said that the Ultimate Cannon scene is the only 'completely different' scene, effectively meaning that there is no need to check for compatibility with manga for Season 1 except for this scene, which is bewildering. That scene is a low bar for scenes to be 'completely different', so I am sure how you came to this conclusion.

Here is a list of some differences; can you elaborate on what makes them 'not completely different'?

• When Yuji jumps up three floors and grabs his friend from the clutches of a Cursed Spirit, in the manga he just crashes through the window and grabs her, but in the anime he crashes through the window and then punches the Cursed Spirit and then grabs her.
• In the manga Yuji's attacks are ineffective against the Cursed Spirit, he bleeds from a punch and backs out to stand next to Megumi, Megumi explains that he is useless without Cursed Energy, so Yuji decides to eat Sukuna's finger because it will 'give him Cursed Energy' even though he could've just stood aside to let Megumi fight. In the anime Yuji dodges the Cursed Spirits' attacks and stomps on its eye causing it to burst and bleed before it regenerates, he then gets punched up in the air and grabbed, he almost loses Sukuna's finger but retrieves it by holding it with his teeth, and when he is about to get eaten by the Cursed Spirit Yuji eats Sukuna's finger in desperation to get Cursed Energy and fight back.
• When Gojo fought one finger Sukuna, Gojo correctly predicted that Yuji will retake control in ten seconds. In the manga Gojo just dodges a punch from Sukuna and punches him to the floor, Sukuna then tries a ranged attack which shreds up the floor but Gojo stops it with Infinity, and the fight ends. In the anime, Sukuna tries a ground smash on Gojo, but Gojo dodges him and sits on his back, then there is some thirty second sequence where Gojo seemingly speed-teleports away from several of Sukuna's attacks he punches Sukuna twice without Sukuna getting knocked down, and when Sukuna does his ranged attack he jumps up first and he then blows up a sizable section of the school building top floor's walls and roof and he makes a big hole on the sky bridge they are standing on as well.
• In Volume 1 extra, Gege tells us to ignore how Nobara managed to kick away the 80 kg Yuji. In the anime, instead of the manga's casual kick, Nobara runs at Yuji first and does a slight jump kick, and the comedic reaction from Yuji is exagerated.
• In the scene where Yuji slashes the Cursed Spirit that tried to sneak up on him, the Cursed Spirit's arm falls to the ground after Yuji backs away in the manga, but in the anime the arm finishes falling to the ground before Yuji backs away.
• When Nobara is separated due to the Finger Bearer and fights multiple Cursed Spirits, some of the fight is shown in the anime and it has an anime-only statement that she could've won if she brought more nails. Both the manga and anime shows how she gets rescued by Megumi. The manga afterwards shows her barely conscious and leaning on Kiyotaka's shoulder while outside, but the anime shows a slightly different scene where she is completely unconscious and carried by Kiyotaka with bandages around her head.
• In the manga Sukuna's first attack against the Finger Bearer is a slap that knocks him down, but in the anime he grabs his head and slams it on the ground.
• In the manga Megumi tells Kiyotaka that he will wait outside because it is his responsability to kill Yuji if things go wrong. In the anime he tells him that he'll wait for Yuji to return, and when Kiyotaka leaves he tells himself that it is his responsability to kill Yuji if the worst case happens.
• When Sukuna throws Megumi up in the air, in the manga Sukuna proceeds to smash Megumi down but Nue suddenly appears and blocks the attack and acts as a cushon as both Nue and Megumi smash through three balconies. In the anime Sukuna directly hits Megumi twice and slams him through several buildings/walls, Megumi then clings to Nue before Sukuna attacks a third time and intentionally hits Nue.
• In the Aoi vs Megumi fight, unlike in the manga the anime has Megumi dodge a punch from Aoi, and Megumi also reacts to several of Aoi's punches and blocks them in the anime.
• When Yuji hangs out with Nanami, it is raining in the anime unlike in the manga, and they even bring umbrellas in the anime.
• In a volume Extra Gege complained that people think that he didn't do his research on the quote Junpei used ('opposite of like is hate') which Junpei attributed to a Japanese person, and he provides information on the quote; the anime adds a dialogue for Mahito correcting Junpei and informing him that the quote wasn't coined by a Japanese person, and that it was mistranslated from 'love' into 'like' since Japanese people use the word 'love' less often.
• When Gojo carts in the box containing Yuji, he almost collides with multiple students from behindin the manga, but he just shows up in front of them in the anime.
• In the Maki vs Miwa fight, Miwa gets pushed back into the river in the anime, but the entire fight happens in the forest in the manga.
• In the Nobara vs Momo fight, the manga has Nobara launches six nails on the upper portion of a tree, and then activates her Hairpin technique to cause the six nails to fracture the upper portion of the tree and cause it to fall toward Momo. In the anime, Nobara shoots a single nail on dozens of trees, and then activates her Hairpin technique to cause dozens of tree to collapse all at once, Momo seems to dodge stray flying nails as well.
• When Maki catches Mai's (properly rubber) bullet, she does so with her right hand in the manga, but in the anime she does so with her left hand; both of them show that Mai's hand is stretched forward, meaning that the scene where the bullet is almost touching Maki's head is likely a prediction from Mai. The anime also adds a segment where Mai tries to attack Maki in close combat afterwards.
• For the scene showing Hanami surviving Hollow Purple, the manga has his ribcage showing out, his skin peeled off, and his guts spilling out. The anime censored the wound to be cleaner where more tissues are destroyed.
• The anime has the younger Death Painting brother tank a lot more attacks from Yuji than he did in the manga.
• In the manga the younger Death Painting brother can create portals that acts as an entrance and exit into his domain, which he uses in the manga to appear behind the trio, and to leave (Yuji uses the same portal he created). But in the anime he doesn't create portals, and both him and Yuji use the same portal Nobara is dragged into, but for some reason appear in a different location than where Nobara and Eso are.
• In the anime the Finger Bearer's omnidirectional blast doesn't smoothen the ceiling like in the manga.
• While running from Wing King, in the manga blood was about to pierce Nobara's head but Yuji pushes her forward and carries her the rest of the way. In the anime she completly falls on the ground while dodging a blood tendril, then Yuji carries her. In the anime Yuji slams into the fence after jumping to stop himself, causing it to bend, when he just falls on the ground in the manga.

I mostly agree with this
Its just that with manga we often have to assume things like timeframes due to them being manga panels.
In Anime we can do things like count the frames or count in seconds.

Although I feel even if some details are quite different in the anime so long as they aren’t outrageous we should use Anime to help with specifics (For example if a character in the anime made a 180 degree swing shown in the anime while for the manga it was assumed to be 90 then we’d adjust the swing angle accordingly) if not shown in the manga or are vague in the manga.
Which is case by case.
