Those panels don't really show him evading anything. He (and a few other of the Zetsu) could've leapt before Darui's jutsu hit the water, or were out of range of it.

  1. Ability to maintain 100% Hagoromo Technique at all times.
  2. Chakra absorption.
  3. Healing Minor Wounds.
Now he is a Demon in Vs Battles

They're good additions ofc but not really weakness coverage.

Why do you guys think Obito didn't capture the Bijuu in the years after Minato's death before he made his pact with Itachi?

Cuz he did not have the rinnegan to summon the Gedō Mazō and seal the extracted Bijuu from the living Jinchuruki. Only Pain/Nagato did with that nine dragon unsealing method. And there is an order for the which Bijuu to be sealed. With Kurama being last cuz the statue would shatter if they sealed him before the others.

Plus it took the full power of the Akatsuki three days to seal each one at a time. For Obito alone if might be impossible.

Not sure what the problem with this is? Obito can just capture the Bijuu/Jinchuriki one by one to be sealed.

There were several Akatsuki members before Itachi joined.
