He was stabbed multiple times in the vital spots (including once in the eye and into his brain) and he just responded by pulling the knife out of his head.
So I think it is pretty safe to say he was a type of undead.

Yeah, i agree. The only thing that really stoped him was being stabbed in the eye by a knife but it only lasted for likely one minute at best. Nothing that the Hound did to him was enough to even really phase him.
