EU or not Grievous should win pretty handily. His durability is much too high for Mistral to break through, Grievous is much faster and his lightsabers should be able to cut through Mistral when his physical blows can't do the job.

The only thing I feel that Mistral has over Grevious is that due to her Spear Whip thingy. She'd have better control over the battlefield, but Grevious can manuever his way through it.
