No. Nothing is being changed. Itachi does not alter a single cell in his body.

This is like saying that someone with mind manipulation resists a taser because that puts electricity in the nerves, which makes the muscles think that they are being told to contract. Or that someone literally giving you a brain surgery to ruin your memory (can be actually done, with some major brain damage) is as easy to resist as Harry Potter saying obliviate
