Ok so Batman isn't killing Steve due to the fact death means absolutely nothing to the MC man. So Batman has gonna know/figure out that he has to restrain him or incap him.

In Character Batman pretty much already means that he's not killing Steve. Batman holding back or figure out ways to avoid killing is pretty much his thing when it comes to his character.

Wait, does Batman know Steve is immortal in the first place? That makes a huge difference since he won't need to avoid killing if he knows his opponent can't die.

That's exactly my point. If Batman in character knows his opponent can't die, he usually would be more effective like when he didn't hesitate cutting off Lobo's finger and then blow his face off twice.

Batman would incap the guy, since killing is not an option

Killing can only be an option for Batman if he knows about Steve's ressurection that drop down his stats to 9-A, thus being quite unfair for Steve

So yeah, its better if Batman doesnt know about the ressurection thing imo
