He does it via transmutation so one touch is enough to turn the opponent into a monstrosity of sorts if he wants to. Of course this is a very out of character move and in character he will never use it even if his life depended on it but since he is bloodlusted here that's not an problem

Use their souls as an sacrifice to open the gate of truth although this will require some prep time and is most likely not possible against people who are comparable to him as it requires them to not resist

Now I am picturing a world where ed failed to bind Alphonse soul to the armour after his body was taken as an sacrifice to open the gate of truth and became severely tramutized (much worse than what he does in the actual show after they fail at their attempt of resurrecting their mother) because of it and ended up becoming a rouge alchemist and in an effort to find a way to save Al started to kidnap and sacrifice people to gather more information by using their souls for opening the gate of truth
