Why would it not have a soul? Most things in Undertale aren't carbon-based life or anything, from snowmen to firepeople and the life. It's obviously animated, too.
You don't need to absorb the physical form of something to get its soul. In-fact, I'm pretty sure it's stated Asriel didn't do - immense power is needed to separate monster bodies and souls without breaking the latter.
