As the title shows, what kind of applications for abilities would be involved with powers such as mathematics that utilizes unsolvable math problems like the Collatz Conjecture (sometimes called the Hailstone Sequence)?

Nothing? Mathematics Manipulation already pertains to all forms of math, and even unsolvable conjectures are still mathematical.

okay, I guess what that would entail when for example someone it trying to read someone’s mind and they encounter the Collatz Conjecture in progress in their mind?

The same as if anyone came across it in your mind, I guess. It's not like you have to solve something to read it. You'll just be thinking about a conjecture while they go through your mind.

It is more like a defense mechanism, like when you try to unravel secrets that the mind with a mathematical structure tends to push back, but brutally.

Only if it's shown that way in the verse, then it's mind resistance.
