Why not just make this match against alive Itachi? That way Guy can actually damage Itachi and he can actually stand a chance. Guy's also trained himself to resist Sharingan genjutsu by reading his opponent's feet.

Kisame has much more chakra than Itachi, and it was decided in this thread that the 30% chakra wasn't referring to overall strength, but stamina instead. Maybe just start Guy with the 1st Gate instead.

He usually doesn't start with that. And the Tsukuyomi requires Itachi make eye contact with the target. Guy explicitly said he'd trained to work around the Sharingan by reading the movements of his opponent's feet to avoid looking at the eyes.
