During the East Blue Saga, Luffy was the one who defeated Arlong. But the Fishman recognized Zoro as a man he must've killed before he'd become a threat, even being severely injured. So this question has come to my mind.

Could Zoro beat Arlong if he weren't that injured?

Gonna go with Zoro here, both are very comparable but due to the fear Arlong had of Zoro and Zoro's superior swordsmanship i think zoro would take this. Arlong's biggest advantage would be going into water but even then since Zoro isn't limited by water like Luffy is it shouldn't be as much as an advantage, he could also still potentially harm Arlong through air slashes.
 
I'm gonna play Devil advocate and put my vote on Arlong. Arlong has proven to an absolute vicious and brutal fighter,and would surely keeps Zoro on his toes. Zoro also isn't as good with one or two swords as he is with all three swords at this point of time, and Arlong, when he figured that out, will do whatever possible to handicap Zoro from using three swords. He also got this Uchimizu like water bullet technique that he can use to keep Zoro at bay.

Arlong does not have any fear of Zoro, iirc, he deem him a threat when he was Weakened, yes, but it due to Arlong thinking that humans were pathetically weak that could die as easily as they can breathe. Then he saw Zoro and the wounds on his body and was shocked that a human could survive something as that caliber.

Luffy's rubber body helped him quite a bit in this fight. It gives him resistance to blunt damage and also give him a lot of range and options. Zoro, while very skilled, his fighting style wasn't as varied as it is later down the road and he'd have to keep on his toes for Arlong.

Saw Tooth, on the other hand, has strength that is no less than Zoro's or Luffy's, when enraged, he seems to become a lot more powerful, a never ending supply of teeth that would be able to block, or heck, take away a sword or two (which would be a great blow seeing as how Zoro's ittoryu and nitoryu were horrid at this time) and water as well.

I'm confident Arlong already knew Human's could be insanely strong as evident when he got beat by Kizaru (Can't remember if this has been officially stated but it's likely why he went to the East Blue to avoid people stronger than himself) and I believe he simply believes Human's are inferior as a weird coping messure. Arlong shouldn't deem Zoro as a threat when weakened unless he fears the thought of Zoro healing.
 
Arlong went to East Blue because Jinbe asked for it when he became a Shichibukai. Yosaku explained that this was the "gift"he gave to the World Govenrment to deal with pirates on that sea.
 
I reread the chapter and not once did Arlong display any fear of Zoro.

He was shocked, along with us, the reader, that someone could survive a wound of his magnitude. Such a wound would have kill a normal human in Arlong's eyes yet Zoro still have the look of a determined man and that shocked him as he considered humans to be inferior creatures. Maybe at that point Arlong was in the mindset of killing before he could eventually become a threat one day but that does not mean he was scared of a battle with Zoro.

Still, i'd argue him saying this is enough to classify as fear, shock doesn't quite capture that but fear does, and the fear is from the danger Zoro poses if he wasn't in the state he was. Though considering he doesn't specify, I don't think such a reaction would come if he only considered Zoro a threat in the long term.
