So the charater drag the moon with his psychic power and shot it clean through the sun and it keep going it was stated that the moon was moving faster than light

We normally use the GBE of the body as a low end for faster than light speeds, unless you can find a non-FTL interval to calc Kinetic Energy from.

So in my opinion it would be "At least Moon level, likely higher"/"At least 5-C, likely higher"

Unless it also noticeably damaged the Sun, in which case it would probably be somewhere between High 5-A and 4-C.

It does carve a very big hole so should it be 4-C

If it's big compared to The Sun itself then yeah, most likely Low 4-C to 4-C. Doing physically impossible stuff like making a hole in The Sun is considered Reality Warping, and Reality Warping is often judged according to it's area of effect.
