two main character questions

In a game, you can choose between two different main characters, but choosing one over the other doesn't really change anything except for a few story cutscenes.

For example, if you choose Character A, Character A appears in the story cutscenes.

If you choose Character B, Character B appears instead, but the unchosen character is still present, travels with you, and remains involved in the story.

My question is: are the actions performed by the character you choose considered canon within the story?
 
Based on your description, where the story remains the same and the unchosen character still exists and travels with the chosen one, the actions performed during those story events would generally be treated as canon to the narrative, unless the devs says otherwise.
 
We'd need more context and specific details to say for sure. If both characters are present for the major events they might have both been involved and compare to each other. Also, sometimes there are hints as to which playable character is the canon one.
