From what I understand, GBE is just the energy to make the planet no longer in a gravitationally bound state, but not to make it quickly blow apart like in most fiction (the planet will gradually expand outwards, but it takes a while). So, why is GBE used as the energy for Planet level, even though most fictional feats involving planetbusting are beyond that?

Because GBE energy leves are >>>> energy levels for fragmentation of a planet. I also think they are >>>> energy levels for vaporization of a planet as well.

This is because gravitational force greatly spikes up the larger mass you achieve. It's a reason why black holes (heavily dense, massive objects) are so powerful.

Also, GBE can be thought of as the energy to send each part of an object as far away as possible, to the point where gravitational attraction is essentially zero...it is a huge distance.

Well, according to Stardestroyer.net our value for Planet level would mean that it would take the planet literally hours to double in size, and that an explosion sufficient to swiftly destroy a planet by making it go boom Alderaan-style would be much higher, Large Planet on our scale.

And yes, I know that for most large objects GBE >>>>>>>>>>>>>>>>>>>>>> energy to fragment them

Because planetary destruction is much slower typically than Freeza levels. A "dead" planet is merely one that is fragmented beyond repair and escapes its own gravitational pull to the other fragments.
