Buu's AP advantage is one-shot worthy but he can't kill Sonic due to type 8. Sonic can beat Buu with his matter manipulation though.

Uhh...
You all realize that Buu has something called Absorption, right? That bypasses Type 8 since whoever he absorbs doesn't actually die, but becomes part of Buu. It's essentially BFR. Since Base Sonic doesn't have a shield like Vegito did, then Buu would win.

Kinda sorta copy-and-pasting from the other Sonic vs. Kid Boo thread.
Sonic: Aside from some pretty okay hax he has a few tricks up his sleeve, like Atom Manipulation which can work on Boo but he most likely wouldn't use it from the get-go and by the time he does use it, it will be too late. And he has Time Stop, which will just keep Boo frozen while Sonic tries death of a thousand cuts or more realistically, Atomic Manipulation or Reality Warping.
Majin Boo: Way higher AP even with the 1.2x baseline thing. While Sonic has a resistance to Magic, likely including Candy Beam, Boo would just simply absorb him once that doesn't work or even just turn him into candy. Some of the abilities Sonic has are pretty mediocre and won't do much against him, including Pressure Point Strikes which likely won't even affect him at all. Even if Sonic has Type 8 Immortality, Boo could just incap or absorb him not to mention his primal nature would likely give him a chance to beat Sonic to a pulp and absorb him before he even gets serious. Really, Sonic's only chance of victory is using a mere two or three abilities which he most likely won't use from the very start.

Sonic has a few more things going for him like intangiblity, clairvoyance, statistics reduction, power nullification, aura that cleanses evil, not sure how this works though, teleportation, and of course the stuff you mentioned.
Also sonic is very smart and is considered a tactical genius and can take advantage of kid buu.
And even though this is sonic and not someone like shadow, considering how buu is i doubt sonic's going to mess around with a character like him before realizing just how much trouble he could be in if he allows buu to live.
Also does kid buu lead with absorption, if not he one shots sonic and sonic comes back and will be more inclined to use his more lethal abilities to finish off buu.

How does Sonic's Fate Manip even work? To me it just looks like multiple inconsistencies and outliers, but I don't know enough about Sonic to know this

Having the proper acausality negates fate hax, but yeah Omega has none so it'll work.
