Scythes are signs of deaths, so why not throw two in the ring?

They don't touch each other though, they touch each other's aura. Think of it like wallpaper on a wall, if you put your hand on the wall while there's wallpaper on it you're not touching the wall itself, you're touching the wallpaper on the wall. That is essentially what aura is except its a full body forcefield. Gordeau would have to get through Qrow's aura first before he can make the contact required to steal his soul.

Gordeau Assimilation can bypass any defence and barriers in the game, he should able to pierce this force field too.

I have to give my vote to Gordeau due to his immortality. Qrow has no way to bypass immortality, such as existence erasure, so he can't really kill Gordeau. Aura is worn down as the user takes damage, so all Gordeau needs to do is slowly wear down Qrow until he can get in a hit with Snatcher to rip out Qrow's soul.
