Saber didn't deal with GoB.
The best she did against GoB was barely survive for an extended period of time, incapable of getting anywhere close to Gilgamesh, bait Gilgamesh into using Enuma Elish, barely survive due to Excalibur, bait it again, and survive using Avalon, allowing her to step in and cut him in half with Excalibur.

I mean my main man Cu lasted against Gob for awhile, possibly half a day, doesn't mean he can actually fight against it if Gil stopped being Gil for a few minutes.
