For the lifting strength part, Ruby can just use her semblance to get out of them holding her down or them trying to restrain her like what she did with hariet in cannonLifting Strength: Yamato by far. If they really wanted to, they could hold Ruby down without much trouble.

BumpMy quick analysis.
AP: Ruby has almost a 5x AP and dura advantage over Yamato, and while Yamato can somewhat lower the gap with their Zoan forms, Busoshoku, and Haoshoku Haki, Ruby will still have an ap advantage and can use Gravity Dust rounds delivery devastating blows and Ki to amp herself even more.
Durability: Yamato fairs a little bit better thanks to their ice armor on top of Zoan forms as well as Busoshoku and Haoshoku Haki, they still are gonna be taking quite a bit of damage cause from Ruby's blows. Meanwhile Ruby has her aura that is a forcefield that blocks all harmful blows until it breaks, and if that happens Ruby becomes a bit more vulnerable and can finally be harmed, but Yamato would still have to land several blows before they could seriously harm an unprotected Ruby and Ruby could still amp her defense with Ki.
For Dura and AP, while Yamato has means to shorten the gap, Ruby's big advantage makes it easier for her to damage Yamato and wear them down while Yamato is gonna be fighting an uphill battle.
Speed: it's been equalized so their base speed is the same. Yamato can amplify their speed with their Zoan forms so as to gain an advantage over Ruby, and their Thunder Bagua attack is even faster than that, basically a blitz attack. Ruby's semblance allows her to blitz people comparable to her base speed, so with it she'll be able to blitz Base Yamato and at least be much faster than Zoan and Hybrid Yamato, but Thunder Bagua is likely comparable, maybe faster than Ruby's semblance.
Since Yamato will likely transform early on to shorten the gap between them, that means that Yamato will have the speed advantage for the most part except for when Ruby uses her semblance (which she does like spamming in the later volumes), where Yamato will be extremely pressured (although Kenbunshoku Haki will basically mitigate the speed gap), but they can use Thunder Bagua for their own blitz attacks if need be.
Lifting Strength: Yamato by far. If they really wanted to, they could hold Ruby down without much trouble.
Stamina: I'm not to sure about the difference.
Range: In CQC Yamato would have more reach with their weapon cause of their size compared to Ruby, but Ruby can just snipe at Yamato with her sniper rounds or ki blasts at ranges that Yamato can only cover with Narikabura.
