The reasoning is right there. Unohana’s best and only feat is killing a bunch of Kenpachi but not the base who fights Gremmy. Sajin goes and fights people who keep getting multipliers slapped on them so he is able to get to that level unlike Unohana and nothing would place her above Gin who can bop the same Masked Ichigo that harms Aizen of all people.

But in the justification of kenpachi's profile being at 6A it stated "Killed Unohana at the end of their training", shouldn't this give Unohana at most 6A?

Not really. We know Kenpachi makes enormous jumps in power when he wakes up so killing Unohana more so points out that he is far beyond his Timeskip self rather than Unohana is 6-A. Her feats or of slapping a High 6-B while Kenpachi’s new base back scales from the likes of Gremmy.
