the martial arts scan is literally from Car Toons which are made up stories created by Mate.

But the thing is, usually in the end of the episode, some aspects of Mate stories are shown to be true, but McQueen never remembers of it, which means that while a good part of the story is true, McQueen parts maybe aren't, so McQueen scans need to be removed

well depends in some of them mcqueen just straight up dies so I think it's safe to say some of them aren't canon most likely should be looked at a case by case basis
